Plate Up. Prosciutto & Melon Salad

This recipe makes a great summery salad for those of you in the northern hemisphere right now. But if you're in chilly Australia like me then I think you'll find it also makes a great refreshing starter before you dive into something heartier. Either way, it's a win-win.


What you'll need
1 teaspoon oil
1 tablespoon good quality balsamic
a handful of basil
half a rockmelon
250g prosciutto

What to do
First, make your dressing. Combine the oil and balsamic, and your basil, torn into chunks (reserving a handful of leaves). Stir and set aside.


Take a plate and layer the prosciutto around, tear it into smaller pieces so it's easy and bite-size. Next, the melon. Use a spoon to create swirls by dragging it through - almost like you would ice-cream. Scatter these around the plate.


Sprinkle the reserved basil leaves and drizzle over your dressing. Really it's so simple and delicious - even those of you who claim you can't cook will be able to master this one. Serve alone as a starter or as an accompaniment, it's great alongside seafood dishes.
