Plate Up. Vanilla & Cinnamon Christmas Cookies

It would seem as though fate doesn't want me to share this recipe with you because after writing and scheduling the entire post - poof! A blogger error made the whole thing disappear. Talk about frustrating. Never matter because it's Christmas and one simply can't be annoyed at this time of year.

I love festive baking. Portions get larger, cakes get more elegantly decorated and the cookies come in delightful shapes and sizes! This little recipe is great to whip up when you'e got guests or to give as little gifts. So go on, off to the kitchen, I bet you've got all the ingredients in your pantry already...


What you'll need
110g butter, room temperature
1/3 cup icing sugar
1 teaspoon vanilla extract
1 cup plain flour
1 teaspoon cinnamon
1/4 cup brown sugar

What to do
Preheat your oven to 160 degrees Celisius and line or grease two baking trays. Grab a bowl and pop in your butter, icing sugar and vanilla, whisking with an electric beater until it's lusciously smooth and creamy. Next, plop in the flour and cinnamon and stir together.


Lightly flour your bench and turn it out to knead until it comes together. Then wrap in plastic wrap and stick it in the fridge for 15mins.

Roll out the dough between two sheets of baking paper until it's about half a centimetre thick. Then cut out your preferred shapes. You can't go wrong with stars at Christmas time. Place on the lined trays and sprinkle with sugar then into the oven they go! About 12-15mins should do the trick.


Serve them up with your favourite cuppa or wrap them up as gifts.
