This recipe is for those who love the combination. Fruit meet vegetable. Because like they say, opposites attract. This salad is fresh and zingy, bursting with flavour AND healthy.
What you'll need (serves 1)
Handful cherry tomatoes, cut into halves
1 peach, cut into small pieces
1 palm sized piece of mozzarella, torn
1 dessert spoon pesto
1 teaspoon vinegar
Basil leaves
Crushed hazelnuts
What to do
I bet you can guess what to do. Yep, simply throw it all together and toss around, sprinkling the basil and nuts over last. It truly is dead easy.
Serve it up with your healthy meal of choice. I like it to eat it with some fish and greens. Beach body, prepare yourself.
