The first few times I met up with British friends I was quite confused. They'd say "let's do brunch" so I'd clear my morning only to find they'd booked a table somewhere at 3pm. What?
Nearly two years later and I've finally adjusted. You could almost say it's my favourite meal of the day now because it can happen any time! When it comes to what to eat, if you're staying in and cooking, this easy one-pan option is a total winner.
What you'll need (serves 2)
Olive oil
1 teaspoon crushed garlic
1/2 can tinned tomatoes
Handful cherry tomatoes, halved
1 small capsicum, sliced
1 teaspoon paprika
1 teaspoon chilli flakes
Handful coriander, chopped
2 eggs
Handful of feta
Bread to serve
What to do
Heat your oil in a large fry pan and add in the garlic. When browned slightly add the tinned tomatoes, cherry tomatoes, capsicum and spices. Leave to simmer for 10mins or so, stirring now and then.
When it's smelling delightful and a little reduced, give it a good season and gently break two eggs on top. Leave them to poach themselves in the sauce, it should take roughly 6-8mins.
When the eggs are just about cooked, sprinkle over the feta and the coriander. Leave it a few more moments to melt. Melting moments are the best.
Then ta-da, time to serve up with toast. Bang the whole thing on a wooden board on the table. It's egg-xtra impressive. Then all that's left to do is dig in...
