Plate Up. Date Loaf







This date loaf is truly a must-have in your cooking repertoire. Not only is it the perfect dish for morning or afternoon tea, it’s so easy to make and tastes absolutely delicious. It is also a great little thing to have to take as a gift when invited to someone’s home, because just like my mum always says, you should never arrive empty-handed. Perfect served with tea or coffee, toasted for breakfast or even as a midnight snack. Enjoy!

What you’ll need
1 cup dates, chopped
1 cup lightly packed brown sugar
60g butter, sliced
1 cup boiling water
1¾ cups self-raising flour, sifted
1 teaspoon bicarb soda
2 teaspoons vanilla essence
¼ cup walnuts, chopped

What to do
Preheat oven to 180 degrees Celsius and grease a loaf tin. Place chopped dates, sugar and sliced butter in a bowl. Pour bowling water over mixture, stirring until butter has melted completely. Add sifted flour and bicarb soda, mixing well. Add vanilla and walnuts and stir until combined. Pour into loaf tin and bake for 45 – 50 minutes.
